HEALTHY SOUP
8/9 large mushrooms
1 green pepper
2/3 carrots
1 tin organic tomatoes
1/2 potato
1 onion
2 tins of hot water(use tin from tomatoes)
1 vegetable stock cube
Bring all ingredients to the boil in veg stock and simmer for minutes, blend for a smooth soup

VEGETABLE STIR FRY
1/2 Green pepper
1/2 red pepper
1 courgette
5/6 chopped mushrooms
2/3 scallions
1/2 cup bean sprouts
1/2 tbsp light soy sauce
1tbsp vegetable oil
1 cup cooked rice
Heat Vegetable oil in wok add mushrooms garlic and fry gently for 3 minutes then add peppers courgette scallions and fry for another 2/3 minutes finally add bean sprouts and light soy sauce
This can be served with 1 cup of brown rice
